Fennel salad with marinated smoked salmon


Fennel Salad and smoked Salmon

It's Christmas time and this fennel salad with marinated smoked salmon is an healthy, tasteful and fine appetizer to start your Christmas eve dinner.


Fennel salad

  • 4 fennel bulbs well washed and finely sliced 
  • (cut the upper green parts of fennels and remove the outer layers)
  • Kernels of 7 walnuts roughly chopped
  • Finely chopped parsley  
  • 2 tablespoons of "Aranciolio" (see our extra virgin olive oil catalogue)
  • A pinch of salt

Marinated smoked salmon

  • Sliced smoked salmon, 150 g
  • 1-2 tablespoons of high quality extra virgin olive oil 
  • Freshly squeezed lemon juice
  • Finely chopped parsley



  1. Carefully separate the slices of salmon and place them on a large plate. Squeeze the lemon on the salmon, sprinkle parsley on top and pour the extra virgin olive oil. Cover with another plate and let it rest in the fridge for 15-20 minutes. 
  2. Place the sliced fennel bulbs into a bowl, add the roughly chopped kernel walnuts, pour the Aranciolo extra virgin olive oil and toss the salad. If you want, you can add a pinch of salt (but not too much...you should taste the flavour combination of different ingredients and not the salt )
  3. Spoon the fennel salad onto plates together with the marinated sliced smoked salmon.
